Roasted Salsa Verde

I ♥ Roasted Salsa Verde & found this great recipe in my local newspaper (Star-Telegram) and thought I should share.

       Roasted Salsa Verde - Makes about 2 cups:
  • 8 - 10 large tomatillos, husks removed & rinsed
  • 1/2 medium white onion, sliced
  • 2 cloves garlic, unpeeled
  • 2 medium fresh jalapenos
  • handful fresh cilantro
  • sea salt, to taste



1.  Roast the tomatillos, onion, garlic, and jalapenos on a comal or cast-iron skillet, over medium-high heat, turning to make sure all sides are browned.  This'll take 15-20 minutes.
2.  Peel the garlic: put everything but jalapenos in a medium bowl.
3.  Slice jalapenos open and discard seeds & membranes.  Add to the bowl.
4.  Add cilantro to the bowl.  With a hand blender, mix everything - but not too much.  You'll wan this to be chunky.

Enjoy with Chicken Tortilla Casserole (Recipe coming soon, so check back) or with Chips!
Nutritional analysis per 1/2 cup serving:  37 calories, 1 gram fat, 6 grams carbohydrates, 1 gram protein, no cholesterol, 31 milligrams sodium, 2 grams dietary fiber, 19 percent of calories from fat.

Get in on the Savings!

Today I came across some Mommas who have never heard of JBF - Just Between Friends. So I decided not to keep the rest of you Mommas in the dark for long. I too was kept from this secret until my little 1st born was about 2 years old & a friend told me all about it. I couldn't believe I had NOT known about this for that long.

JBF is a large, LARGE, consignment one-stop shop for everything baby, toddler, kids, and maternity CONSIGNMENT SALE! Basically in a nut shell this is how it works:

Go to website http://www.jbfsale.com/ and sign up. Clean out your kiddo's closets. Tag your items, take your stuff to their specified location on certain dates throughout the year, sit back at home & watch your stuff sell like crazy!!! I have sold over $700.00 at the Fort Worth Fall Sale a year ago & realized this is the best thing ever. I average about $300 to $400 at each sale. They have sales in the Spring & in the Fall. You can shop or consign or both! Either way, clear out the old & bring in the new!

Welcome

Welcome to my blog. My little "mini me" is my daughter Abby! She is 2 1/2 years old & is truely like me in every good & not so good way! She is an artist, a drama queen (at times), loves life, loves to eat & is fun! I love being around my baby girl. She brings so much joy to my life. I also have a 4 year old son who is like his daddy. BUT this blog is not only about the kids & our crazy Camp life together but about how to save money! I want to help enrich lives through saving money, inspiration, laughter, & encouragement.
